Bethune Lane Yoghurt +Mango Icy Poles

Is there anything more refreshing than an icy cold treat on a hot summer’s day?

Even though we have barely seen or felt the warmth of the sun these past few months we’ve made up a batch of these delicious frozen yoghurt treats hoping to entice the sun out for the upcoming Christmas and school holiday period.

There’s an abundance of mangoes this year as our farming friends in the northern states have had a more than bumper year so we’ve taken advantage of this and used some mangoes to whip up these easy frozen yoghurt popsicles. The base of this super simple recipe is of course our creamy, fresh Pot Set Yoghurt. We’ve added the mangoes and a touch of delicious local honey from just north of us in Wood Wood for a heavenly blend. Though we’ve used mangoes in this recipe, any fruit would be perfect. We made up a batch using some fabulously juicy strawberries and cherries from our neighbours at Lake Boga farms. The fresh strawberries blended ever so beautifully with our yoghurt that we didn’t find the need to add any sweetener, though we might experiment a little and add a splash of vanilla or some fresh mint or basil leaves next time we try.

Bethune Lane Yoghurt + Mango Icy Poles

RECIPE:

1 whole mango

1 teaspoons honey

250 g Bethune Lane Pot Set Yoghurt

METHOD:

Place all ingredients into a blender and blend until smooth.

Pour into moulds and freeze.

Enjoy on a hot summer’s day!
