Easy ‘cheesy’ Ricotta

Who knew making your own cheese at home was as easy as one, two, three, four?

Using just four ingredients and following four simple steps you can make ricotta in your own kitchen in just 20 minutes, much quicker than a trip to the shop (well it certainly is for us living on the farm).

We love using this fresh ricotta in cakes (who doesn’t love an apple and ricotta cake) on pizza, as a filling mixed with spinach and pumpkin for pasta and sausage rolls, in pancakes, on top of fresh stone fruit or even with some Vegemite on toast the list of possibilities is endless!

The fresh, creamy flavour of our Farm Milk shines in this recipe and will have you leaving those store bought ones on the shelves (unless we release a ricotta of course-never say never!).

Make your own fresh ricotta using these four ingredients.

You will need:

  • 2 L of Bethune Lane Dairy Farm Milk

  • 1 lemon (juiced)

  • 1 Tablespoon White Vinegar

  • 1 Teaspoon of salt

Here’s how simple it is to make your own Ricotta…

  1. Pour milk into a microwave safe bowl and microwave on high for 16 minutes.

  2. Add lemon juice, vinegar and salt to heated milk.

  3. Stir gently and watch as curds begin to form.

  4. Using a slotted spoon, scoops curds into a strainer over another bowl to drain off the whey. Place the curds into a container- this is your ricotta ready to use!

We recommend that you use this ricotta as soon as possible because as always, fresh is best!
